An ancient grain from medieval times, fregola is an ancient semolina pasta (like cous cous) native to Sardinia, where durum wheat is the island’s main crop. It is generally coarser in texture than cous cous, however, and is also toasted, giving it a nutty, wheaty flavour. Fregola is available from selected food stores and health-food shops.
