Here is a delicate green soup of sliced leeks thickened with a purée of avocado and cream, which makes it highly nutritious as well as tasting wonderful. It is equally good hot or chilled.

Ingredients

  • 2 chicken stock cubes
  • 2 pints (1.2 litres) water
  • 1<

Method

Crumble the stock cubes into the water in a saucepan. Dissolve the cubes, stirring over the heat; then bring to the boil, add the prepared leeks, cover the pan and simmer for 8–10 minutes. Meanwhile, cut the avocado in half and scoop out the flesh and put in a food processor with the lemon juice and the cream. Whizz until smooth. Spoon this purée into the saucepan and stir to mix evenly. Season
