There is a famous old Turkish recipe for stuffed aubergines which is reputed to have made the Sultan faint with delight. M y recipe for cold stuffed aubergines includes smoked oysters and almonds, and although no-one actually fainted on tasting it, their enthusiasm was intense. The soft skin of the aubergines tastes just as good as the filling so don’t let anyone leave it on their plate.
