Ingredients: 1 small handful of fresh basil leaves, chopped, plus 6 small whole leaves, to garnish; 5 tablespoons (5 x 15 ml spoon) mayonnaise; 1 tablespoon (15 ml spoon) tomato purée; 2 cloves of garlic, chopped finely; 2 tablespoons (2 x 15 ml spoon) olive oil; 12–18 crisp lettuce leaves; 6 large firm tomatoes; 6 medium-size to large eggs (size 1–2); salt and black pepper
