These make a piping-hot first course, and also make good snacks or hors d’oeuvre: golden puff pastry oozing with a tantalising filling of tuna fish and crisp water chestnuts, with a bite of fresh chilli. It is a practical dish since you can prepare the puffs, which look rather like folded handkerchiefs, well ahead so that you only need pop them in the oven shortly before you eat.
