  • 1 cos lettuce, separated, with the crunchy parts of the stems removed
  • ½ pint (300 ml) double cream

Method

Smoked salmon is expensive and this way of presenting it makes it even more of a treat. It is a beautiful dish for a special occasion. The smoked salmon is wrapped round a layer of brilliant-green blanched lettuce leaves and filled with a creamy mousse of horseradish. If you can’t get cos lettuce use an ordinary cabbage lettuce, but cos has a better flavour.
