A hot first course, with the possible exception of soup, always makes it seem as if you have taken extra trouble. Certainly, dishes which need cooking at the last moment can cause a panic. However, you can make these piquant pies well ahead and simply warm them up. Transformed by their wonderful sauce, no-one will believe that you didn’t spend hours scrubbing and preparing fresh mussels instead of simply opening a can.
