In this cold dish the smooth texture and slightly sweet flavour of plaice goes well with an interesting stuffing of bananas spiced with fresh ginger. This is topped with a sauce of soured cream, turmeric and fresh coriander.

Ingredients

  • 2 large, slightly unripe bananas
  • juice of 1 lemon

Method

Heat the oven to Gas Mark 6/400°F/200°C. Peel the bananas and cut into small pieces. Put in a bowl and mix with the lemon juice. Stir the chopped ginger and chopped garlic into the bananas. Season with salt and then 2–3
