Tucking in to a plate of scrambled eggs with smoked salmon is the perfect way to start a late lazy Sunday. It goes down very easily, especially with a glass of bubbly or a Bloody Mary. There are lots of variations on the theme, of course, like Scotch woodcock (creamy eggs on slices of toast spread with anchovy paste), and I recently discovered another, very exotic variant.
