Herring soft roes or milt are normally sold frozen or defrosted but can occasionally be found fresh during the spring and early summer months. The frozen ones cook quite nicely and, treated correctly, no one will know that they were not fresh. The other great fish offal is cod chitterlings, which look similar to those belonging to the pig, but taste rather like herring roes.
