What’s posh about dogfish you may ask; quite rightly so, but a few years ago you might well have said the same of cod and monkfish. Both dogfish and smooth hound or tope are generally sold as huss, and known to fishermen as dogfish. To add to the confusion, they are sold as rock salmon in fish and chip shops. Otherwise they are completely forgotten about. The fairly firm flesh will withstand a bit of braising and marinating. I’ve used a mixture of equal parts meat stock and fish stock here,
