My Brazilian buddy Sergio taught me this recipe many years ago. You’ve probably had Pão de Queijo at one of those all-you-can-eat Brazilian steakhouses. This version is easy. Just mix in a blender, bake, and watch them rise sky high in the oven.

Ingredients

  • 1 pasture-raised and organic egg
  • 1 cup grass-fed milk, full fat

Method

Preheat oven to 400°F. Add the egg, milk, oil, and cheese to a blender and mix on high for 10 seconds. Add ¼ teaspoon baking powder, 1 teaspoon salt, put the lid on, and blend at medium speed. With the motor running, add the sour tapioca starch, one large spoonful at a time. Once all t
