For years, I used to go to Rodizio Grill Brazilian Steakhouse in downtown Nashville to celebrate my birthday. This recipe is an ode to my favorite dish there as well as their amazing chefs and staff. Marinated in a savory chile marinade, these pork loin steaks are skewered and cooked over the fire, then coated with a nice salty Cotija cheese crust. This packs a delicious punch and creates a gooey crust.
