Here is another yeast bread with a Provençal flavour, which is perfect for breakfast.

Be careful if you want to toast it, however, as the sugar content browns the bread more quickly than plain bread. Any leftovers make a superior bread and butter pudding.

Ingredients

  • 1 teaspoon dried yeast
  • 115 ml /4 oz / ½

Method

In a small bowl sprinkle the yeast on the warm water. In a large bowl mix the flour, salt and sugar. Stir in the liquid yeast then add the egg yolk, orange flower water and melted butter. Mix thoroughly and, when well incorporated, knead the dough for 10 minutes until it is supple and no longer sticks to your fingers. Cover the bowl and let the dough rise for an hour.
