This is a very traditional English farmhouse cake, from that middle belt of England where pigs have always been reared, hence the lard. Despite what you might think, lard is the perfect fat for producing light and airy baked goods.

Ingredients

  • 1 teaspoon caster sugar
  • 300 ml/10 fl oz/

Method

Make a plain dough by mixing the sugar and water and sprinkling the yeast on top. When it has begun to froth, mix it with the flour and salt and 25 g/1 oz/2
