Fairy cakes are a version of the cup cake and these used to be made for tea parties when I was a child. So-called because the top of the cake would be neatly hollowed out in a round, this would be cut in half, the hollow filled with butter cream and the two pieces of sponge neatly perched on top to represent wings.

Method

Fairy cakes can be smaller and more delicate than cup cakes, so the same amount as the cup cake recipe will make about 18 fairy cakes. Rose, violet and lavender can be used to vary the recipe, with the appropriate flower water or culinary essence.
