With this recipe, I wanted to create a cake with the same flavours as the best rose and lemon Turkish Delight.
Whisk the eggs thoroughly, then add the sugar and whisk again until thick, pale and creamy. Stir in the butter alternating with the flour. Take half the mixture and colour it pink, also adding a drop or two of rose essence. Add lemon zest to the second portion.
