This and the next recipe are based on the classic brandy snap, made crisp with the addition of Golden Syrup. Once the biscuits are baked, you need to work fairly quickly to ensure that the snaps are cool enough to handle yet not too firm to mould round the wooden handle. You can also mould them on a greased rolling pin, which will give you a more open shell, a tuile, that you can fill with fruit and cream, or simply serve with coffee or at teatime.
