Line two baking sheets with silicone or baking parchment.

Ingredients

  • 150 g/5 oz/ sticks unsalted butter

Method

Cream the butter and sugar, then beat in the egg and fold in the flour. Stir the chocolate and almonds into the mixture, as well as the lavender essence, if using it.

Scoop up walnut-sized balls with floured hands and place them on two prepared baking sheets, well spaced. Press down with fingers, or spatula, to a diameter of about 7.5
