Garsington lavender shortbread

The terrace of Garsington Manor used to be lined with a dense border of lavender when I spent some time there as a consultant for the opera season menus, so inspiration for this shortbread recipe was not hard to find. We served it with gooseberry fool originally, and I recommend it with any fruit fool, ice-cream or sorbet, especially lavender of course.
