To ensure maximum volume for the egg white, it is essential to have a scrupulously clean bowl and no specks of egg yolk in the white. Even the slightest film of grease will prevent it attaining its full volume. Meringues are notoriously tricky to make if you are working in a humid atmosphere, because one is drying them as much as baking them.
