Freshly baked madeleines are often served as petits fours at the end of dinner in restaurants. Because they bake so quickly, this is just about achievable at home, but also consider serving them as part of a ‘chocolate tea’ or merienda, that rather agreeable Spanish and South American tradition whereby hot chocolate is served in the late afternoon with a few pastries.
