For a true Proustian delight, serve these with a delicate china cup of tilleul, an infusion of linden flowers. Dried or fresh can be used. They are also excellent served with ice-cream made with the same linden flower honey.

Grease 48 madeleine moulds (or bake in several batches).

Bring the honey to the boil and stir in the linden flowers. Simmer for a few minutes and then remove from the heat and infuse for 15 minutes.
