Rose petal meringues are the perfect base for that exquisite summer dessert, Eton Mess, simply crushing the meringues and mixing with strawberries and whipped cream, which can also be scented with a hint of rosewater.

Ingredients

  • 1 large egg white
  • 100 g/scant 4 oz/scant ½ cup

Method

Line a baking sheet with non-stick baking parchment or a silicone mat.

Put the egg white in a scrupulously clean bowl – any film of grease will prevent it attaining its full volume. Sprinkle on a tablespoon of sugar and begin whisking. When the egg white is foamy and increased in volume, add half the remaining sugar and continue whisking.
