I wrote in The Scented Kitchen about the ‘androgynous’ nature of lavender, a flower which marries sweet or savoury equally well. It is excellent with tomatoes, themselves somewhat androgynous – fruit, but treated as a vegetable. Here the lavender is every bit as effective as the more usual partners for tomatoes, basil or mint, and that bit more unusual. It makes an exquisite vegetarian first course for a summer meal.
