A custard recipe always leaves you with far more egg whites than you know what to do with. Here is a lovely elderflower recipe, based on the medieval sambocade, which makes the most of them. Using egg whites alone keeps the filling of the tarts elegantly pale. These would be perfect for a celebration tea in late spring when the elder tree is in full blossom.
