Using the same method as the traditional Key lime pie – biscuit crust and condensed milk filling – I like to make this with lavender and lemons instead of limes, because lemon and lavender is such a perfect match. Of course, if you use new season’s lemons they don’t coincide with lavender flowering, but a few dried lavender flowers in the crust, a drop of culinary lavender essence in the filling and some crystallised lavender buds for decoration will scent and flavour the pie beautifully.</
