This recipe raises the humble jam tart to new heights, especially with its scented pastry. In an ideal world, home-made fig and rose petal jam would be used. When I make it, I follow a standard strawberry jam recipe, as figs have little pectin and the same type of recipe works well. For the rose flavouring, you can add dried or fresh rose petals and boost it with a drop or two of rose essence.
