Golden celebration cake

Ingredients: 1.25 kg/2½ lb dried fruit, the more golden the better, such as apricots, sultanas, peaches, mango and mixed citrus peel, all soaked overnight in 150 ml/5 fl oz/¾ cup almond or orange liqueur; 1 tablespoon mixed spice; 2–3 tablespoons orange flower water; 115 g/4 oz/¾ cup flaked almonds; 75 ml/3 fl oz/⅓ cup orange juice; 1 teaspoon powdered mace; 225 g/8 oz/2 sticks unsalted butter; 200 g/7 oz/1 scant cup light muscovado sugar; 4 eggs; 300 g/10 oz/1½ cups plain flour, sifted; 2 tablespoons finely grated orange zest; 1 teaspoon ground cardamom

About

As an alternative for a fiftieth birthday or Golden Wedding, a christening or other family party, this is the perfect cake because, like a traditional Christmas cake, it can be baked well in advance of the event, and will only get better with keeping. This is usually my recipe of choice for Christmas too.
