‘Deep and crisp and even’, that is the simple topping for this cake, icing sugar thickly dredged on an orange-scented crystallised fruit cake. Easy to make at the last minute and, with the ingredients almost certainly to hand, this is a very good cake for tea on Boxing Day, the feast of St Stephen.
