Creating the menu for a place like Flour is a bit like playing pick-up sticks. You make a dizzying number of different breakfast treats, cookies, cakes, tarts, and breads, and then you hope that once you throw them out there, they will be snatched up! When I opened Flour, I didn’t know if I should include craqueline on our menu because I wasn’t sure it would sell. Craqueline is a French breakfast pastry, one I learned to make at Payard.
