Coconut Macaroons

Chewy, sweet, soft, crispy—this coconut macaroon combines all of these delectable descriptors in one small package. What you get depends on where you bite into the cookie. These macaroons are fabulously easy to put together, too. You make a small batch of pastry cream, mix it with coconut, egg whites, and sugar, and you’re done. When baked, the edges become crispy and caramelized while the centers stay soft. These are a perennial favorite at Flour—and at my house. I bring one home almost ev
