The best compliment I ever received about these melt-in-your-mouth bars came from Rick Katz, the first pastry chef I worked for and one of my pastry idols. Getting a job in his bakery changed my life. After a few months in his kitchen, I knew I wanted to follow in his footsteps. He was detail oriented, incredibly passionate, and cared only about making sure our pastries were all amazing and perfect. To this day, when making a new pastry I ask myself, would Rick like this?
