Apple and Quince Tarte Tatin

The delightful, oft-told story about tarte Tatin is that the Tatin sisters, who ran the Hôtel Tatin in France’s Loire Valley in the late 1800s, accidentally created this tart one day when one of the sisters got flummoxed and forgot the bottom crust of her signature apple tart. She hastily rolled out a piece of puff pastry, draped it on top, and crossed her fingers as she put the whole thing in the oven. When it came out, the sugar and butter from the bottom of the pan had combined wi
