Ingredients

  • 2 lb (scant kg) fish trimmings, bones, head, etc.
  • 1 onion

Method

Cover all the ingredients with the water and bring to the boil. Simmer for 30 minutes.

Strain through muslin or a very fine sieve and taste. If it is too bland, return to the heat and reduce until the flavour pleases you.
