  • 2 lb (scant kg) fresh anchovies
  • 5 oz (150 g)

Method

Dehead, gut and clean the fish. Rinse well under fresh water and dry with kitchen paper. Mix together the breadcrumbs, Parmesan and herbs. In another bowl, beat the two eggs with a little olive oil, salt and pepper as for an omelette.

Set the oven to gas mark 7/425°F/220°C. Smear a suitably attractive baking dish with olive oil and arrange a layer of anchovies in it. Brush these with mo
