  • 1 bream, at least 2 lb (scant kg)
  • Salt and pepper

Method

Scale, gut, clean and wash the bream and then dry it carefully. Set the oven at gas mark 7/425°F/220°C.

With some of the oil, grease an ovenproof dish. Salt and pepper the bream inside and out and put the thyme and bay leaf inside the fish. Pop the fish into an oven dish, add the spring onions and the rest of the oil and cook for 10 minutes.
