Cod Fillet in Yellow Bean Sauce

Before you start screaming, you can buy a tin or jar of yellow bean sauce from a Chinese supermarket. This dish makes an excellent meal for two or three or can be part of a larger Chinese banquet.

Ingredients

  • 1 lb (450 g) cod fillet, cut into 1 in (2.5 cm) cubes
  • 1 or 2 tablespoons yellow

Method

Mix all the ingredients, except the oil, in a bowl and marinade the fish for 1 hour. Heat the oil in a wok and stir-fry the fish on a medium heat for just a few minutes till golden and almost cooked. Add the marinade and continue cooking until the sauce has reduced, leaving the fish well coated and moist. Serve with steamed broccoli or pak choi.
