Take all the meat from the crab (which you have cooked yourself), and season well with the nutmeg, salt and pepper, lemon juice and chilli sauce. Mix these ingredients well together and pack into ramekins. Cover with melted butter and bake in a bain-marie, in a low oven, for 20 minutes.
When they are almost cool, top up the ramekins with clarified butter and allow to set.
