Ingredients

  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 1 leek, chopped

Method

Put the olive oil in a large frying pan (or paella) over a low heat and sauté the onion, leek and tomato for 2 or 3 minutes or until the onion begins to colour.

Add the rice and mix thoroughly with the oil and vegetables until every grain is coated with oil. Add the wine and stir constantly until all the wine has been absorbed.
