Salade Niçoise

I have decided to include this wonderful rustic dish, which, properly prepared, is a great way to eat tinned fish. In recent years it has become abused as a kind of culinary kitchen sink into which any old garbage is thrown, particularly in the ubiquitous wine bars and ‘theme’ pubs that blight this fair island of ours.
