This is a very useful marinade for pork, chicken and chicken liver kebabs.

Ingredients

  • 6 tablespoons sake (or sweet sherry or Madeira)
  • 6 tablespoons soy sauce

Method

Mix all the ingredients together and marinate your meat in the fridge for at least 6 hours. Dry the kebabs before cooking and once they are sealed baste from time to time with the remainder of the marinade.
