This is an excellent marinade for pork. The meat can be left to marinate for up to 48 hours.

Ingredients

  • 2 tablespoons juniper berries
  • 5 allspice berries
  • 1 teaspoon

Method

In a large mortar grind the juniper berries, allspice berries, thyme and peppercorns to a coarse powder. Add the bay leaves and salt and grind until the ingredients are well blended.
