As this is a barbecue book and most of the fun is to be had out of doors you are permitted to make this sauce the easy way.

Ingredients

  • 8 cloves garlic
  • 2 egg yolks
  • 15 fl oz (400

Method

Put all the ingredients except for the olive oil into a food processor, turn on and pour in the oil slowly but evenly, until you have a beautiful, thick sauce.
