Method

Melt the butter in a pan. Add the flour, stirring all the while to avoid lumps, and cook till it turns golden but not burnt.

Now add the chicken stock, whisking all the while, and continue cooking for at least 5 more minutes. Now add the Madeira, salt and pepper. Simmer for 4 minutes more before serving.
