This paste makes a delightful accompaniment to grilled shellfish.

Ingredients

  • 1 green mango
  • 1 clove garlic, finely crushed
  • 1 teaspoon

Method

Peel the mango, remove the nut and mash the flesh as smoothly as possible. Add the garlic, coriander, chilli and salt and finally beat in the olive oil till all is well amalgamated.
