Cod Fillets with Lemon

This lemon and bacon mixture will liven up the dullest of fish for the grill.

Ingredients

  • 4 fillets of cod (or any white fish)
  • 2 tablespoons olive oil
  • 4 slices

Method

Salt and oil the 4 fillets and grill them for 4 minutes on each side. While they are cooking, oil a small frying pan and fry the bacon strips until they are golden. Once they are a little crunchy add the butter, capers, parsley and the lemons. Once the butter has melted remove from the heat because this sauce must not cook, it must just warm through.

Place the fish on your serving dish
