Swordfish in Lettuce Leaves

  • 4 × 8 oz (225 g) swordfish steaks
  • Juice of 1 lemon

Method

Mix the lemon juice, oil, fennel seeds, salt, garlic and parsley. Marinate the fish in the mixture ail day or overnight.

Spread the lettuce leaves flat and place the fish steaks on them, with plenty of the marinade. Cover with more lettuce leaves and tie up securely with string.

Grill the fish, preferably in a hinged grilling basket, over very hot coals for at least 10 minutes o
