For this recipe you should make some rum punch, hire a steel band and get your guests limboing under the raspberry canes while you attend to the food.

Ingredients

  • 4 × 6 oz (175 g) fillet steaks
  • 2 cloves garlic</

Method

Peel and then crush the garlic into a paste and mix it with the oil, the rum and plenty of milled black pepper. Paint this marinade over the meat and leave for an hour, turning occasionally.
