Method

Flatten the fillets with the ball of your hand. Mix the butter and shallots into a paste. Liberally mill black pepper over the steaks and then spread each side with the shallot butter.

Grill the steaks over the fire for 4 minutes each side and serve with fresh green beans, watercress and chips.
